I Salvaminuti Maize and Quinoa mix
1 yellow pepper
100 g cherry tomatoes
1 red onion
100 g chopped parsley
juice of 1 lemon
salt, black pepper and extra virgin olive oil
small mint leaves, to garnish
Maize and quinoa tabbouleh
Cook the Maize and Quinoa mix according to the instructions on the packet.
In the meantime, dice the cucumber, pepper, cherry tomatoes and onion.
Add the parsley and season with salt, pepper and lemon juice.
Add the vegetables to the Maize and Quinoa mix and serve cold with the mint leaves.
