250 g I Salvaminuti 5 Grains
200 g potatoes
1 small red onion
salt, pepper and extra virgin olive oil
Bring a large pot of salted water to the boil, add the 5 Grains and cook for 10 minutes.
Wash, peel and dice the potatoes. Finely chop and brown the onion in a drizzle of oil, add the potatoes, salt, pepper, saffron and a bit of water to cover the potatoes. Cook on a high heat for about 10 minutes.
Wash and then roast the mushrooms for about 2 minutes on each side.
Stuff the mushrooms with the drained 5 Grains and put in the oven for 5 minutes at 190°C.
Blend the potatoes with a hand blender until you obtain a purée. Salt to taste and serve with the mushrooms stuffed with 5 Grains.
Add the finishing touches with some basil leaves and wait for the compliments to come pouring in.
