I Salvaminuti Quinoa and Lentils
50 g almonds
50 g cranberries
30 g rocket
extra virgin olive oil, salt, chili pepper
Cook the Quinoa and Lentil mix according to the instructions on the packet and leave to cool.
In the meantime, dice the avocado and the papaya.
Toast the chopped almonds in a pan and add salt and chili pepper to taste.
Combine the Quinoa and Lentil mix with the avocado, papaya and toasted almonds and add the cranberries and rocket.
Serve with a drizzle of oil and enjoy your salad.
